Take MPC Hazledeens Chicken, about 1.8kg
Pat dry with Paper towel
In approximately 4 tablespoons of quality salted butter add finely chopped sage & oregano (a teaspoon each) 2 cloves of crushed garlic and the zest of one lemon, mix all together. Stuff the butter mix under the skin of the chicken. Then insert the lemon into the cavity of the chicken
Rub chicken with olive oil and salt
Put the chicken breast side down on a bed of rosemary & 1 halved red onions & 8 garlic cloves so the bird is elevated off the base of the tray
Into the hot oven for 20 minutes and then turn down the oven & cook for another 40/50 minutes.
Rest
Removed everything from the pan. Squeeze the cooked garlic into the juices and make a simple gravy with a teaspoon of flour to remove the flavour off the pan and thicken and a cup of cold water. Sieve to Serve.
